Drunken Goat - This cheese has been“made drunk” by submerging it in a bath of Doble Pasta wine (Mourvedre grapes) for 72 hours, giving the rind a vivid purple hue. Delicately grapey with a mild fruity flavor. Ibérico - Beautifully balanced, full of flavor, but with a very mild sharpness. It is over half cow’s milk, lending a smoothness that adds nuance to the bright, tangy flavors of the other milks. Mahon – A cow’s milk cheese from Menorca, in the Balearic Islands. Creamy flavor, pale yellow with the perfect nutty finish. Mahon is versatile in the kitchen. Manchego – Extremely buttery and aged to perfection. Made by the Corcuera Family from Manchego sheep that graze in the provinces of Albacete, Ciudad Real, Cuenca and Toledo, all of which form the region of La Mancha.
