It is over half cow’s milk, lending a smoothness that adds nuance to the bright, tangy flavors of the other milks. Mahon – A cow’s milk cheese from Menorca, in the Balearic Islands. Creamy flavor, pale yellow with the perfect nutty finish. Mahon is versatile in the kitchen. Manchego – Extremely buttery and aged to perfection. Made by the Corcuera Family from Manchego sheep that graze in the provinces of Albacete, Ciudad Real, Cuenca and Toledo, all of which form the region of La Mancha.
